Chicken – however much needed
1 cup chicken broth
2 ½ cups stuffing mix (not the cubes)
1 stick margarine
1 cup frozen peas
1 can cream of celery soup
2 tbls chopped onion
½ cup evaporated milk
Cook chicken, reserving 1 cup broth. Remove meat from bone and break into small pieces. In medium bowl, melt margarine. Add stuffing mix and combine well. Set aside. In sauce pan combine chicken, peas, evap. Milk, soup and onions. Heat until hot throughout. Place 2/3 of stuffing mix into bottom of sprayed 8x8 baking dish. Add soup mix. Sprinkle remaining stuffing over mix. Pour in chicken broth all over. Heat in 450 degree oven for about 10-13 minutes. If you like peas you’ll love this. You can also make it with broccoli. I made this at least once a week the whole first year we were married. It’s one of my favs!
